Even before the chocolate is added, these granola bites are delicious to have as a snack. But they're such a decadent delight when dipped in chocolate!
You can prepare them entirely in advance and store them in the fridge. But they're also fun to do as part of a casual dessert bar with your family and friends. (This can be a little messy!) I like to have the granola baked and cut into bite-sized bars ahead of time (usually in the morning). Then it's just a matter of getting the toppings ready, melting the chocolate, and setting everything out in little bowls. Small tongs or forks are useful for holding the granola bites for dipping. Or you may prefer to use a small knife to spread the chocolate on the granola bites. The fun of making them can happen before dinner so that the chocolate will harden before it's time for dessert.. You could place the freshly-dipped bites in the fridge to speed up the process.

CHOCOLATE-DIPPED GRANOLA BITES

METHOD 1. Preheat oven to 350°F. Line an 8-by-8-inch metal pan with parchment paper. 2. In a large bowl, add the dry ingredients and stir to combine. 3. If the almond butter is firm, soften it by heating it in a small saucepan for a few minutes. Then in a medium bowl, add the almond butter along with the other wet ingredients and stir to combine. 4. Pour the wet mixture into the bowl with the dry ingredients and stir to evenly coat. 5. Spread the granola evenly in the pan and use a spatula or large spoon to pack the mixture down firmly. 6. Bake for 20 to 25 minutes or until the top is firm and the edges are golden brown. 7. Remove the pan from the oven and place on a rack to cool. Then use the edges of the parchment paper to lift the granola from the pan and place on a cutting board. To cut into bite-sized pieces, first cut the granola in half lengthwise and then crosswise, forming 4 squares. Next cut each square into three bars, for a total of 12. Each of these bars is cut in half, for a total of 24 granola bites (You may also choose to leave some as larger bars.) 8. The granola bites will be ready for dipping when they have cooled completely. 9. Work in small batches to dip and garnish 6 granola bites at a time. Melt one ounce of chocolate by placing it in a small microwavable bowl in the microwave on high power for approximately one minute. Stir until chocolate is completely melted. 10. Dip each granola bite, one at a time, in the melted chocolate to achieve the desired design (see photo above for inspiration). Garnish as desired. Place granola bites on a plate or wax-paper lined baking sheet. 11. Repeat steps 9 and 10 until all granola bites are garnished as desired. 10. Let the granola bites stand at room temperature, or refrigerate, for 30 minutes or until chocolate is set. Then serve or place in an airtight container and store in the fridge for up to 3 days or in the freezer for up to 2 weeks. *COOKING TIPS
