This warm Choco-Oat Parfait can be built with as many delicious layers as you desire. The parfait in the photo began with a layer of homemade granola bar crumbles in the bottom of a short glass. Next came spoonfuls of oatmeal yumminess and a generous drizzle of hot chocolate sauce. You can finish your parfait with any of your favourite toppings. In the photo above you see raspberries, mango, almonds, pieces of granola bar, rolled oats and fresh mint leaves.

SUGGESTIONS FOR GARNISHING/LAYERING/TOPPING
METHOD STOVETOP METHOD FOR COOKING OATMEAL (If you prefer you may use the microwave directions on the product package. Or you may choose to use cold overnight oats in this parfait.) 1. Add water and almond beverage to a small, uncovered saucepan. Heat on stovetop. 2. Gradually stir oats into the boiling water. 3. Lower heat and cook oats, stirring occasionally, for 3 minutes. 5. Place the cover on the saucepan and remove it from the heat. 6. Let stand for a few minutes until oatmeal thickens. ASSEMBLING THE PARFAIT (Assemble and serve the parfaits in 2 small glasses or bowls. The recipe provides instructions for 3 layers as shown in the photos. You may choose to assemble the parfait in a different way.) 1. The first layer contains granola crumbles. Cut the granola bar into 4 pieces. Crumble 2 of the pieces and place them in the bottom of each glass or bowl. 2. The second layer is oatmeal, either hot or cold. Add the oatmeal to each glass or bowl, covering the first layer and sharing it equally. 3. The third layer is the topping and garnishing. Pour 2 tablespoons of hot chocolate sauce over the oatmeal in each glass. Continue the topping layer by adding the granola bar pieces, fruit and any nuts to each parfait. Garnish with a fresh mint (if using). COOKING TIP Check the ingredient list on the food packaging to ensure that each food item used in the recipe meets your dietary needs (e.g. gluten free, peanut free or dairy free).
